Berry & Coconut Gummies

 

 

Ingredients:

 

2 cups coconut water (or apple juice)

 

1 cup mixed berries (thawed if using

 

frozen)

 

Juice from ½ lime.

 

1 cup water

 

3 tablespoon raw honey

 

6 tablespoons grass-fed gelatine

 

Instruction:

 

1. Add the 2 cups of juice (or coconut water), berries, lime juice and to a high-speed blender and blend until smooth. Transfer to a small saucepan and heat gently (no need to boil, just create a hot liquid). Add honey and stir well.

 

2. Bloom gelatine by adding to a small bowl with 1 cup of room temperature water, or extra juice or coconut water (note juice will make a sweeter version). Stir until it thickens. Add gelatine to warmed juice and stir well until completely dissolved.

 

3. Pour evenly into glass molds.

 

4. Place in the fridge for at least 3 hours to set.
