Blueberry Banana Pancakes
Ingredients
1/2 cup oat flour*
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 teaspoons melted butter or coconut oil (use oil for dairy-free)
1/2 cup mashed ripe banana (1 large banana)
1 egg
1 tablespoon milk (plant base will work too)
1/3 cup fresh or frozen blueberries
Instructions
In a small bowl, stir together oat flour, baking soda, salt, and cinnamon.
In a large measuring cup, melt 1 tablespoon of butter or coconut oil. To the measuring cup, add mashed banana, 1 egg, and 1 tablespoon of milk.
Add wet ingredients to the dry ingredients and stir until just combined. Add blueberries and give one more gentle stir. Let the batter rest for 10 minutes.
While batter rests, turn a skillet or griddle on medium-low heat. Spoon batter onto griddle and cook for 3-4 minutes, until the facedown side is lightly golden. Turn with a spatula and cook for 3-4 more minutes. Top with honey or maple syrup, banana rings, and raspberries or blueberries.
