Blueberry Banana Pancakes

Ingredients

  • 1/2 cup oat flour*

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/4 teaspoon cinnamon

  • 2 teaspoons melted butter or coconut oil (use oil for dairy-free)

  • 1/2 cup mashed ripe banana (1 large banana)

  • 1 egg

  • 1 tablespoon milk (plant base will work too)

  • 1/3 cup fresh or frozen blueberries

Instructions

  • In a small bowl, stir together oat flour, baking soda, salt, and cinnamon.

  • In a large measuring cup, melt 1 tablespoon of butter or coconut oil. To the measuring cup, add mashed banana, 1 egg, and 1 tablespoon of milk.

  • Add wet ingredients to the dry ingredients and stir until just combined. Add blueberries and give one more gentle stir. Let the batter rest for 10 minutes.

  • While batter rests, turn a skillet or griddle on medium-low heat. Spoon batter onto griddle and cook for 3-4 minutes, until the facedown side is lightly golden. Turn with a spatula and cook for 3-4 more minutes. Top with honey or maple syrup, banana rings, and raspberries or blueberries.
